ASIAN FOODWAYS:KOREAN Similar to Chinese food in its ingredients and cooking methods, Korean cuisine is distinctive in its heavy use of garlic and hot chili peppers. It is perhaps best known for kimchi, a type of vegetable pickle that accompanies every meal. Traditionally, different varieties of kimchi were made according to different seasons, with the most common being made of napa cabbage marinated in salt, anchovy paste, garlic, onion, and chili peppers, then fermented for as long as six months.
